Recipe: Lemon Melting Moments

Truly melt in your mouth and simply tantalising biscuits, also known as yo-yos these melting moments with a subtle taste of lemon will keep you coming back for more - Perfect for a little pleasurable snack, something to take to a afternoon with the girls or to simply sit back with a lovely book and a cup of tea and enjoy: That is exactly what I did!



Ingredients: 
250grams of unsalted butter, softened 
1/3 cup of icing sugar, sifted 
1tbsp of grated lemon rind 
1 1/2 cups of pain flour, sifted 
2tbsp of cornflour, sifted 

Lemon Filling:
60grams of unsalted butter, softened 
1 1/2 tsp each of lemon juice and rind
3/4 cup of icing sugar, sifted 

Method:
1. Preheat the oven to 160 degrees celsius, grease the baking trays or line them with baking paper. 

2. Using the electric mixer, cream the butter with the icing sugar and lemon rind until light and fluffy. 

3. Sift together the flour and cornflour, add to the butter mixture and mix until a soft dough is made. Pinch off pieces of dough and roll into small balls, the recommended size being a size of walnut or roll into a ball the desired size that you wish. 

4. Place on the prepared baking trays about 5cm apart, press each one down slightly with the palm of your hand and then using a fork dipped in cold water, mark the biscuits to decorate. 

  5. Bake for 15 minutes or until lightly golden, using a metal spatula, carefully remove from the trays and place on cooling wire racks to cool. 

6. For the lemon filling, beat the butter with the lemon juice and rind until pale and creamy. Add the icing sugar and continue and beat until just combined. 

7. Place the filing onto one biscuit and sandwich the cooled biscuits together. Store in an airtight container. 

Hint: For the lemon filling I only used one teaspoon of lemon juice and for me personally this was the perfect amount of lemon taste within the icing.
