Recipe: Nutella Stuffed Cinnamon Sugar Muffins

1/3 of a cup of unsalted butter, softened to room temperature 
1/2 cups of sugar 
1 large egg
1 teaspoons of vanilla extract 
1/2 cups of milk 
1 and 1/2 cups of all purpose flour 
1 and 1/2 teaspoons of baking powder 
1/2 teaspoons of ground cinnamon 
1/4 of a teaspoon of ground nutmeg 
1/2 teaspoons of salt 
8 teaspoons of Nutella 

Cinnamon Sugar Topping:
1/4 cups of sugar 
2 teaspoons of cinnamon 
3 tablespoons of unsalted butter 

1. Preheat the oven to 200 degrees Celsius, spray the muffin tray with cooking spray or place the muffin cases and then set aside. 

2. In a large bowl of an electric mixer of stand mixer, cream the butter and sugar together on a medium speed. Mix in the egg, vanilla extract and milk. Gently store in the flour, baking powder, cinnamon, nutmeg and salt. Make sure you do not over mix, stir until it is just combined. 

3. Spoon a tablespoon of mixture into the muffin cavity, then layer 1 teaspoon of Nutella into the centre of the mixture and then spoon another tablespoon of mixture onto the top of the Nutella. Repeat the layering of the batter and Nutella into each of the muffin tins. 

4. Bake at 200 degrees Celsius for 5 minutes, reduce the oven to 175 degrees Celsius and bake for a further 13-17 minutes until the batter is set. Allow the muffins to cool for about 5 minutes. 

5. While the muffins are cooling, make the cinnamon sugar topping. Melt the butter for about 30 seconds in the microwave. Stir and place back into the microwave if not fully melted. In a separate bowl, stir together the sugar and the cinnamon. Then dip the top of each muffin into the melted butter and then dip into the cinnamon sugar mixture, swirl them around in the sugar mixture to make sure they get a thick coating. For this process I brushed on the butter with a pastry brush and then spooned the cinnamon sugar mixture onto the muffins, I then tipped them over the bowl to remove any excess mixture.
